For me, it depends. I do tend to take Canon Sexuality over fanon. That includes having a Gay character suddenly be straight. There are exceptions, but those are characters how have shown an attraction to both genders over the course of the series they are from (Looking at you Willow!)

I wouldn't have any issue with characters like Sun and Neptune, if I felt that they served a purpose to the story other than being "the boyfriends." I feel like that's the only thing they add to the show from a narrative stand point. Granted I haven't watched anything from V4 yet other than the trailer, so I don't know if Sun's character has gotten any deeper (last I heard Neptune has yet to make an appearance). From Volume 1 through Volume 3, I haven't seen anything from those two characters to actually make me care about what impact they have on the story. I feel like you could remove them and nothing of significance could change.
Really, if there's one thing I wish could be changed about this series, it's if they could use their time better when it comes to character development.

Personally, I like Sun. I agree with your point about him and Neptune seeming to just be narrative "Boyfriends" and nothing more, but I still enjoyed Sun. I hate Neptune in every regard, but Sun I liked as a character.
Thus, having watched V4, it pains me to tell you that if anything he's gotten WORSE in that regard. Becoming a literal tag-along for Blake, and winding up in "Meet the Parents" scenario where he just WON'T SHUT UP.
