Minato actually managed to take an arm off too in his fight with Tobi. It was shown in the anime as it oozed off creepily. But didn't take out his eye.
Plus we don't know for a fact yet that Tobi is a member of the Uchiha Clan. Just sayin.

Well Tobi may have lost a Sharingan but he did Nagato's Rinnegan and he would've replaced one of his eyes with it anyway. Still, I was so sad to see Konan die. ;_;
