The term originated in the 1997 mecha action anime Yuusha_Ou_GaoGaiGar (The King of Braves GaoGaiGar) and had a non-sexual definition. In the context of that series, symmetrical docking referred to the maneuver where the combined form of Hyouryu and Enryu, Chouryujin, was released. The term gained its current meaning thanks to a popular Super_Robot_Wars 4koma featuring Kusuha_Mizuha and Seolla_Schweizer 'symmetrical docking' as opposed to the Gaogaigar-style symmetrical docking.
